INGREDIENTS:

  • 1 (15 oz.) can Juanita’s Hot & Spicy Nacho Cheese Sauce or Juanita’s Original Nacho Cheese Sauce
  • 1 lb ground beef
  • 1 cup long grain rice
  • 12-15 fried tortilla chips
  • 1 can diced tomatoes, drained
  • 1 15 oz. can pinto beans, drained
  • 1 15 oz. can tomato sauce
  • 1 medium onion, diced
  • 1 clove minced garlic
  • 3 green onions, sliced thin
  • 8 oz. can evaporated milk
  • 1 tsp salt
  • 1 tsp cracked black pepper
  • 1 tsp ground cumin
  • 1 tsp chili powder

STEP BY STEP:

  1. Cook ground beef with dried seasonings in a large skillet over medium heat for 5 to 7 minutes until browned. Drain excess fat.
  2. Stir in tomatoes, onions, tomato sauce, water, seasonings, rice, and beans, and cook over medium heat for 5-7 minutes until bubbling. Simmer for 20 minutes, stirring occasionally to check rice tenderness.
  3. Heat Juanita’s Nacho Cheese Sauce in a small pan. Stir in 1/2 can of evaporated milk a little at a time until the cheese sauce is pourable and has a silky-smooth texture.
  4. When beef and rice mixture is ready, stir in half of the cheese sauce until blended in. Fold in crushed tortilla chips. Garnish with green onions and serve with a side of tortilla chips and extra queso.
