INGREDIENTS:

1 cup Juanita’s Tamarind Orange Sauce

1 lb x-large shrimp, peeled, tail on

Juice of 1 lime

2 tbsp. cilantro, chopped
-
1 red onion, 1-inch chunks
-
1 green bell pepper, 1-inch chunks
-
20 fresh pineapple chunks, 1-inch cubes
-
Salt and pepper to taste

Wooden skewers, soaked 1 hour
STEP BY STEP:

Preheat the grill to 375ºF.

Mix Juanita’s Tamarind Orange Sauce, lime juice, and cilantro in a medium bowl.

Salt and pepper the shrimp. Thread the shrimp, pineapple, red onions, and peppers onto the skewers, alternating the red and green peppers.

Brush the skewers with half the marinade and let sit for 5 minutes.

Grill the skewers for 4-5 minutes per side, or until the shrimp is pink and cooked through. Brush the skewers with the remaining sauce as they cook.
