ABOUT THIS RECIPE:
This ain’t your abuelita’s pudding! Dive into a creamy, dreamy Mexican Hominy Pudding. It’s packed with citrus and juicy raisins, all nestled in a bed of fluffy Juanita’s Hominy. ☀️ Top it off with a sprinkle of cinnamon for that full sweet nostalgic feeling!
INGREDIENTS:
- 1 can (25 oz.) Juanita’s Mexican Style Hominy or Juanita’s White Hominy, drained
- 1 cup condensed milk
- 1 liter whole milk (or lactose-free)
- 1/2 cup water
- 1 cinnamon stick
- Peel of 1 lemon
- 1/2 cup raisins
- Cinnamon powder (to taste)
STEP BY STEP:
- Wash and drain Juanita’s Hominy.
- In a pot, add the water and cinnamon stick. When the water boils, add the liter of milk and Juanita’s Hominy. Bring to a boil.
- Once it comes to a boil, add the condensed milk and mix very well to ensure it dissolves completely and does not stick to the bottom of the pot.
- Add the raisins and lemon peel.
- Lower the heat and let it simmer until it thickens slightly.
- When ready, pour it into a container and let it cool.
- When serving, sprinkle with cinnamon powder.
