Fiesta is here with this vibrant Hominy Pico de Gallo! It’s a refreshing twist on the classic salsa, swapping out some of the usual suspects for plump Juanita’s Hominy, juicy tomatoes, crisp onions, and a kick of jalapeño (or serrano pepper) come together for a delicious and addictive condiment. Puro fuego!
INGREDIENTS:
- 3 cups Juanita’s Mexican Style Hominy or Juanita’s White Hominy, rinsed and drained
- 4 tomatoes, diced (seeded)
- ½ cup white onion, chopped
- 2/3 cup cilantro, finely chopped
- 1 jalapeño or serrano pepper, finely chopped
- Juice of 1 lime
- Olive oil and salt (to taste)
STEP BY STEP:
- Rinse and drain Juanita’s Hominy thoroughly.
- In a bowl, combine the diced tomatoes, onion, cilantro, and chopped jalapeño or serrano pepper. Mix well.
- Squeeze the lime juice over the mixture.
- Add olive oil and season with salt to taste.
- Mix all the ingredients thoroughly until well combined.
