INGREDIENTS:
- 2 teaspoons of minced garlic
- ½ cup of red onion
- 2 tablespoons of oil
- 1 teaspoon of ground cumin
- 1 teaspoon of chili powder
- ½ teaspoon of salt
- 1 cup of diced red pepper
- 1 cup of diced zucchini
- 30 ounces of black beans drained and rinsed (2 cans)
- 2 cups of Juanita’sⓇ Hominy
- ½ cup of salsa
- 1 tablespoon of lime juice
- 2 tablespoons of finely chopped cilantro
- ¾ cup of queso fresco
STEP BY STEP:
- In a large skillet, sauté garlic and onion over medium heat until slightly softened.
- Add cumin, chili powder, salt, red pepper and zucchini. Cook for 2 minutes.
- Add black beans and Juanita’sⓇ Hominy and cook 3 – 5 minutes until heated through.
- Squeeze lime over mixture and stir.
- Remove from heat and stir in salsa.
- Garnish with cilantro and cheese.
