Hominy & Black Bean Stir Fry

INGREDIENTS:

  • 2 teaspoons of minced garlic
  • ½ cup of red onion
  • 2 tablespoons of oil
  • 1 teaspoon of ground cumin
  • 1 teaspoon of chili powder
  • ½ teaspoon of salt
  • 1 cup of diced red pepper
  • 1 cup of diced zucchini
  • 30 ounces of black beans drained and rinsed (2 cans)
  • 2 cups of Juanita’s Hominy
  • ½ cup of salsa
  • 1 tablespoon of lime juice
  • 2 tablespoons of finely chopped cilantro
  • ¾ cup of queso fresco

STEP BY STEP:

  1. In a large skillet, sauté garlic and onion over medium heat until slightly softened.
  2. Add cumin, chili powder, salt, red pepper and zucchini. Cook for 2 minutes.
  3. Add black beans and Juanita’s Hominy and cook 3 – 5 minutes until heated through.
  4. Squeeze lime over mixture and stir.
  5. Remove from heat and stir in salsa.
  6. Garnish with cilantro and cheese.
