Cheesy Hominy Gorditas

ABOUT THIS RECIPE:

Juanita’s Cheesy Hominy Gorditas will be your next favorite carne asada dish! Enjoy them on their own or top with guacamole and pico de gallo for a true fiesta flavor. ¡Deliciosas!

INGREDIENTS:

  • 1 can (25 oz.) Juanita’s Mexican Style Hominy or Juanita’s White Hominy, drained (708 g.)
  • ¼ cup shredded cheese – queso Oaxaca or Monterrey Jack (30 g.)
  • 2 tbsp. vegetable shortening or lard (30 g.)
  • 2 tbsp. instant corn tortilla mix (8 g.)
  • 1-2 tbsp. water (15-30 ml.), as needed
  • Extra instant corn tortilla mix for dusting
  • Extra vegetable oil for griddle
  • Optional side dishes – purchased guacamole and/or pico de gallo

STEP BY STEP:

  1. Place Hominy, cheese, corn tortilla mix, and shortening/lard in the bowl of a food processor. Pulse until smooth. Add small amounts of water to facilitate blending.
  2. Dust a clean surface with extra instant corn tortilla mix. Remove the dough from the food processor and place it on the dusted surface.
  3. Knead for 60 seconds, then divide the dough into 12 equal portions.
  4. Roll the portions into balls and flatten into gorditas by patting them out with your hands.
  5. Heat a small amount of vegetable oil on a griddle or skillet. Place a gordita on a heated griddle and cook until golden on each side, about 10 minutes total time over medium heat.
  6. Serve with guacamole and pico de gallo on the side.
