ABOUT THIS RECIPE:
Juanita’s Cheesy Hominy Gorditas will be your next favorite carne asada dish! Enjoy them on their own or top with guacamole and pico de gallo for a true fiesta flavor. ¡Deliciosas!
INGREDIENTS:
- 1 can (25 oz.) Juanita’s Mexican Style Hominy or Juanita’s White Hominy, drained (708 g.)
- ¼ cup shredded cheese – queso Oaxaca or Monterrey Jack (30 g.)
- 2 tbsp. vegetable shortening or lard (30 g.)
- 2 tbsp. instant corn tortilla mix (8 g.)
- 1-2 tbsp. water (15-30 ml.), as needed
- Extra instant corn tortilla mix for dusting
- Extra vegetable oil for griddle
- Optional side dishes – purchased guacamole and/or pico de gallo
STEP BY STEP:
- Place Hominy, cheese, corn tortilla mix, and shortening/lard in the bowl of a food processor. Pulse until smooth. Add small amounts of water to facilitate blending.
- Dust a clean surface with extra instant corn tortilla mix. Remove the dough from the food processor and place it on the dusted surface.
- Knead for 60 seconds, then divide the dough into 12 equal portions.
- Roll the portions into balls and flatten into gorditas by patting them out with your hands.
- Heat a small amount of vegetable oil on a griddle or skillet. Place a gordita on a heated griddle and cook until golden on each side, about 10 minutes total time over medium heat.
- Serve with guacamole and pico de gallo on the side.
