Hominy & Green Chile Cornbread

INGREDIENTS:

  • 1 ½ cups of yellow cornmeal
  • ¼ cup of all purpose flour
  • 4 tablespoons of sugar
  • 1 teaspoon of baking powder
  • ½ teaspoon of baking soda
  • ¼ teaspoon of salt
  • 1 egg
  • 1 cup of milk
  • 1 cup of Mexican sour cream
  • 2 tablespoons of melted butter
  • ¾ cup of Juanita’s Hominy chopped
  • ½ cup of roasted green chiles (well drained if using canned)

STEP BY STEP:

  1. Preheat oven to 400º. Coat a 9-inch square baking dish or cast iron skillet with cooking spray or butter.
  2. In a large bowl mix cornmeal, flour, sugar, baking powder, baking soda and salt.
  3. In a separate bowl mix egg, milk, sour cream and butter.
  4. Pour liquid ingredients into dry ingredients and mix well.
  5. Fold in the hominy and green chile peppers.
  6. Pour batter into prepared baking dish.
  7. Bake 25 – 35 minutes or until a toothpick inserted into the center is dry.
  8. Let cool 15 minutes before serving.
