INGREDIENTS:
- 1 ½ cups of yellow cornmeal
- ¼ cup of all purpose flour
- 4 tablespoons of sugar
- 1 teaspoon of baking powder
- ½ teaspoon of baking soda
- ¼ teaspoon of salt
- 1 egg
- 1 cup of milk
- 1 cup of Mexican sour cream
- 2 tablespoons of melted butter
- ¾ cup of Juanita’sⓇ Hominy chopped
- ½ cup of roasted green chiles (well drained if using canned)
STEP BY STEP:
- Preheat oven to 400º. Coat a 9-inch square baking dish or cast iron skillet with cooking spray or butter.
- In a large bowl mix cornmeal, flour, sugar, baking powder, baking soda and salt.
- In a separate bowl mix egg, milk, sour cream and butter.
- Pour liquid ingredients into dry ingredients and mix well.
- Fold in the hominy and green chile peppers.
- Pour batter into prepared baking dish.
- Bake 25 – 35 minutes or until a toothpick inserted into the center is dry.
- Let cool 15 minutes before serving.
