Are you craving a Mexican twist on corn nuts? Try @valerianatttt‘s Air-Fried Hominy Snack in 3 flavors: Pico de Gallo, Chili y Limón, and Elote! A quick and crunchy treat.
INGREDIENTS:
- 25 oz. can of Juanita’s Mexican Style Hominy or Juanita’s White Hominy
- Olive oil spray
- Elote seasoning
- Chile lime seasoning
For the pico de gallo:
- Tomato, cubed
- Onion, cubed
- Lemon juice
- Green chile – serrano pepper, chopped with seeds
STEP BY STEP:
- Drain the Hominy in a colander and give it a rinse. Break up any little nibs that are stuck together. Let the Hominy drain in the colander for a few minutes.
- Remove the tray from your air fryer basket, then add Hominy to the bottom of the basket to create a single layer. Close the air fryer and set it to 400℉ to dry the Hominy out.
- While the Hominy is air frying, combine cubed tomato, cubed onion, lemon juice, and green chile – serrano pepper slices to create Pico de Gallo. Set the Pico de Gallo aside; it will add a burst of flavor to one batch of your air-fried Hominy.
- Once the air fryer reaches temperature, drizzle the Hominy with oil and toss to coat. Close the air fryer and cook for 13-22 minutes, shaking 3-4 times, until the corn nuts sound hard and crunchy when you shake them in the basket.
- After air frying, divide the Hominy into three batches. Season each batch separately: One with Elote seasoning, one with the prepared Pico de Gallo, and one with Chile y Limón.
