Hominy a la Charra

ABOUT THIS RECIPE:

INGREDIENTS:

  • 2 cans (25 oz. each) Juanita’s Mexican Style Hominy or Juanita’s White Hominy, drained
  • 1 cup pinto beans, cooked
  • 10 oz. chorizo
  • 1 pound package bacon, chopped
  • 1 onion, diced
  • 1 jalapeño, diced
  • 2 garlic cloves
  • 1 tbsp. paprika
  • 1 tbsp. tomato chicken bouillon
  • 3 roma tomatoes, diced
  • 8-10 cups water or chicken broth
  • 1 bunch cilantro, chopped
  • Salt and pepper (to taste)
  • Limes for serving

STEP BY STEP:

  1. To a large soup pot set to medium-high heat, add in the bacon and cook until crispy, 7-10 minutes. Remove from the pot and set aside. Remove excess bacon fat, leaving only 1-2 tbsp in the pot.
  2.  Add in the chorizo and cook for 6-8 minutes, breaking it up into smaller pieces.
  3. Add in the onion, jalapeño, and garlic. Cook for 2 minutes, stirring to combine.
  4. Add in the spices, stir to mix and cook for 2 more minutes.
  5. Add in the tomatoes, stir to mix, and cook for 6 more minutes.
  6. Add in the Hominy and beans, half of the cooked bacon, the water or broth. Bring to a boil, then reduce heat to low and let simmer for 15-20 minutes.
  7. Lastly, add in the bunch of cilantro, the chicharrones, and cook for 7-10 more minutes.

SUGGESTION: Serve in bowls and top with fresh-squeezed lime juice.
