ABOUT THIS RECIPE:
Enjoy a satisfying main dish! Unique tacos with fresh nopales, Juanita’s Hominy, and savory chile ancho salsa for a delicious plant-based meal!
INGREDIENTS:
- 1 can (25 oz.) Juanita’s Mexican Style Hominy or Juanita’s White Hominy, drained & rinsed (708 g.)
- 1 ½ lbs. fresh cactus, thorns removed, washed & sliced* (750 g.)
- 2 dried chile ancho, stem & seeds removed
- 2 cups water (480 ml.)
- 1 clove garlic
- 2-3 tbsp. olive oil (30-45 ml.)
- 1 cup sliced onions (150 g.)
- 1 tomato, seeded & diced
- Salt (to taste)
- Pepper (to taste)
- Corn tortillas (about 8)
STEP BY STEP:
- Boil the cactus in a medium-sized saucepan for 10 minutes until tender. Drain, discard the water, and rinse the cactus.
- Place the prepared dried chiles, water, and garlic in the container of a blender. Puree until smooth.
- Heat the olive oil in a large saucepan or skillet. Add the onions and brown well.
- Add the tomato and allow to sauté for 2-3 minutes.
- Add the chile puree, reduce the heat. Simmer for 5-8 minutes until the sauce is reduced.
- Stir in the cooked cactus and Juanita’s Hominy. Season with salt and pepper to taste.
- Serve with warm corn tortillas.
NOTE: Substitute a 30 oz. / 850 g. jar of prepared cactus if fresh is not available. Drain jar, no cooking necessary, add in Step 6.
