ABOUT THIS RECIPE:
This Cilantro Lime Hominy botana is a vibrant side dish packed with bright lime juice and fragrant cilantro, full of sabor fresco! It’s the perfect accompaniment to any meal con la familia!
INGREDIENTS:
- 4 cups Juanita’s Mexican Style Hominy or Juanita’s White Hominy, darined and rinsed
- 4 celery stalks, chopped
- 1/2 onion, diced
- 2 garlic cloves, minced
- 2 tbsp. olive oil
- Salt and pepper (to taste)
- 3 tbsp. freshly squeezed lime juice
- 1 bunch of cilantro
STEP BY STEP:
- Heat a skillet over medium heat and add the olive oil.
- Once the oil is heated through, add the onions, celery, and garlic. Cook until they become slightly soft and translucent, but not mushy.
- Add the Hominy, salt, and pepper, and heat through.
- Remove from the heat, then add lime juice, and sprinkle with cilantro. Serve.
