ABOUT THIS RECIPE:
Bring a big bowl! This Hominy Carne en su Jugo is a fiesta. Savory beef and crispy bacon simmer in a rich, homemade green sauce bursting with tomatillos, chiles, and cilantro. Including Juanita’s Hominy then adds a delightful contrast, making this dish a hearty and satisfying meal.
INGREDIENTS:
- 1 can (25 oz.) Juanita’s Mexican Style Hominy or Juanita’s White Hominy
- 3 green onions (scallions)
- 3 pepper güeros
- 2-3 pounds of solid beef meat, cut into small cubes
- 250 grams of bacon
- 1 clove of garlic, finely chopped
- Salt and pepper (to taste)
For the green sauce:
- 8 tomatillos (green)
- 1/2 white onion
- 2 fresh jalapeños
- 1 serrano
- 2 cloves of garlic
- 1 bunch of cilantro
- 1 tsp. oregano
- Salt (to taste)
- 1 chicken bouillon cube
- Water for blending
STEP BY STEP:
- Blend together the tomatillos, white onion, jalapeños, serrano pepper, garlic, and cilantro until smooth. Set aside.
- Chop the bacon into small pieces.
- Heat a pot over medium heat. Once hot, add the chopped bacon. Cook until the bacon is crispy. Remove the bacon from the pot and set aside.
- In the same pot, using the bacon fat, sauté the chopped green onions, pepper güeros, and garlic until fragrant. Reserve.
- In the same pot, fry the beef cubes until browned and cooked through. Add salt.
- Add the green sauce, the cooked bacon, onions, chiles güeros, and Juanita’s Hominy. Cook for a few minutes, mixing well to combine.
- Pour in the green sauce and mix until all ingredients are coated.
- Add the chicken bouillon cube and oregano. Season with salt and pepper to taste.
- Reduce the heat to low and let the sauce simmer until it thickens and develops a darker color, stirring occasionally.
- Taste and adjust the seasoning if needed. Let it simmer for a few more minutes.
