ABOUT THIS RECIPE:

Bring a big bowl! This Hominy Carne en su Jugo is a fiesta. Savory beef and crispy bacon simmer in a rich, homemade green sauce bursting with tomatillos, chiles, and cilantro. Including Juanita’s Hominy then adds a delightful contrast, making this dish a hearty and satisfying meal.

INGREDIENTS:

For the green sauce:
  • 8 tomatillos (green)
  • 1/2 white onion
  • 2 fresh jalapeños
  • 1 serrano
  • 2 cloves of garlic
  • 1 bunch of cilantro
  • 1 tsp. oregano
  • Salt (to taste)
  • 1 chicken bouillon cube
  • Water for blending

STEP BY STEP:

  1. Blend together the tomatillos, white onion, jalapeños, serrano pepper, garlic, and cilantro until smooth. Set aside.
  2. Chop the bacon into small pieces.
  3. Heat a pot over medium heat. Once hot, add the chopped bacon. Cook until the bacon is crispy. Remove the bacon from the pot and set aside.
  4. In the same pot, using the bacon fat, sauté the chopped green onions, pepper güeros, and garlic until fragrant. Reserve.
  5. In the same pot, fry the beef cubes until browned and cooked through. Add salt.
  6. Add the green sauce, the cooked bacon, onions, chiles güeros, and Juanita’s Hominy. Cook for a few minutes, mixing well to combine.
  7. Pour in the green sauce and mix until all ingredients are coated.
  8. Add the chicken bouillon cube and oregano. Season with salt and pepper to taste.
  9. Reduce the heat to low and let the sauce simmer until it thickens and develops a darker color, stirring occasionally.
  10. Taste and adjust the seasoning if needed. Let it simmer for a few more minutes.
