This Hominy Mexiburger recipe is about to become your new favorite take on a veggie burger. It’s packed with protein from Juanita’s Hominy and black beans, and big flavor from fresh bell peppers, onion, and a touch of chipotle. Be ready to be wowed!
INGREDIENTS:
- 1 can (25 oz.) Juanita’s Mexican Style Hominy or Juanita’s White Hominy, drained
- 1 cup bell peppers (any color), chopped
- 1 bunch cilantro, chopped
- 1 cup bread crumbs
- 1 onion, chopped
- 1 tbsp. canned chipotle chile in adobo sauce
- 2 cans black beans, drained and rinsed
- 2 large eggs
- 5 tbsp. vegetable oil
- 1 tsp. ground cumin
STEP BY STEP:
- In a large saucepan, heat 1 tbsp of vegetable oil and add the hominy. Fry for 2 minutes.
- Using a potato masher, mash 2 cups of black beans until smooth.
- In a large bowl, whisk together the eggs, chipotle, ground cumin, and 1 tbsp. of vegetable oil.
- Add the Juanita’s Hominy, mashed beans, remaining whole beans, bread crumbs, onion, bell peppers, and cilantro to the egg mixture. Blend everything together until well combined.
- Form the mixture into burgers about an inch thick.
- In a frying pan, heat the remaining oil. Place the burgers in the pan and cook for 4 minutes per side, until golden brown.
- Let the burgers cool slightly before serving.
